📆📍When I first started my online business, one of the biggest draws to it was the ability to be free to travel whilst working.
That was back in 2017, and we can all agree a lot has occurred between then and now, but one thing hasn’t, and that’s the love for the freedom of working and earning an income wherever I land. 🛫
Although, I’m only on my tod for a short while on this particular trip I often travel solo and think nothing of it. Actually, I love it as you are so much more aware of your surroundings and opens to meeting new people.

I always say simple is best, however the most common thing I get from people when they get started is “Can I get more recipes” or “more information” when they only eat a limited range for each meal, and they know nothing about what is in them or how it will affect them. Whereas the best thing to do is just keep things simple and take action.
I think the best example I’ve seen of this was when Kevin lost 40kgs after becoming frustrated by not being taken seriously when doing nutrition talks. Back in 2010, Kevin had just finished his MSc at Stirling and was working as a coach and sports scientist delivering nutrition talks. Having gained weight during his studies, Kevin was around 120kgs. People weren’t listening to what he said as he was overweight. Fed-up with this, he decided to make a change and put into practice what he had learned.
At first, he started looking at all the science, 100’s of recipes and different diets. Here’s the thing, none of this lost weight and instead, he just got lost in deciding what to eat or what theory to follow. Eventually, he decided to instead apply what he knew as a coach to the problem and turn nutrition into a “practice” by simplifying everything and mastering the basics and rather than trying to have 100’s of recipes and different theories instead to get 2-3 for each meal and focus on getting better at those.
What we learned from this was knowing all the science and recipes don’t help. Instead, we realized the concept of “practice” is key. Cambridge dictionary defines this as: “the act of doing something repeatedly to improve your skill at doing it”. Applying this to nutrition means practicing one thing with a focus on getting better at it before moving on.
That’s why I think you should stop trying to know everything, you don’t need to know 100’s of recipes or facts. Instead you should PRACTICE one or two things to improve these before trying to add in any “extras”.
Muffin liners
Nonstick cooking spray
1 large banana
3 scoops Cafe Latte Shakeology
3 large eggs, lightly beaten
¼ cup / 60 ml unsweetened almond milk
¼ cup / 20 g unsweetened cocoa powder
2 tsp. pure coconut sugar
1 tsp. baking soda
1 Tbsp. + 1 tsp. semisweet (or dark) chocolate chips
How to make it...
Preheat oven to 350° F (180 °C). Line a muffin pan with 9 muffin liners; lightly coat with spray.
Add banana to a medium mixing bowl; mash with a fork. Add Shakeology, eggs, almond milk, cocoa powder, coconut sugar, and baking soda. Stir to combine. Add chocolate chips; gently fold into batter.
Divide batter evenly among prepared muffin liners.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Let muffins cool slightly. Enjoy immediately, or refrigerate in an airtight container for up to 4 days or freeze for up to 1 month.
